Margaret Thatcher "invented" soft scoop ice cream by putting air bubbles into it and thus brought about Mr Whippy ice cream vans

Questionable, unless there's some difference between soft-serve ice cream

and what Mr. Whippy sells.

Thatcher was born in 1925, IINM, while Dairy Queen was doing soft serve as late as 1940 (some sources cite 1938). It could be possible that she was on a team that customized soft serve such that it was more suitable for a mobile environment (tbf, soft serve is not, in my experience, commonly found on ice cream trucks; it's more of a roadside stand thing).

A chemical research team in Britain (of which a young Margaret Thatcher was a member) discovered a method of doubling the amount of air in ice cream, which allowed manufacturers to use less ingredients, thereby reducing costs. It made possible the soft ice cream machine in which a cone is filled beneath a spigot on order. In the United States, Dairy Queen, Carvel, and Tastee-Freez pioneered in establishing chains of soft-serve ice cream outlets.

Incidentally, in the UK, soft-serve is virtually universal and exclusive to vans (or trucks if you will).

Right, but Dairy Queen was selling soft serve circa 1940, when Thatcher was 15.

The soft serve formula was first developed in 1938 by John Fremont "Grandpa" McCullough, (1871‒1963), and his son Bradley. They convinced friend and customer Sheb Noble to offer the product in his ice cream store in Kankakee, Illinois. On the first day of sales, Noble dished out more than 1,600 servings of the new dessert within two hours. Noble and the McCulloughs went on to open the first Dairy Queen store in 1940 in Joliet, Illinois. While this Dairy Queen has not been in operation since the 1950s, the building still stands at 501 N Chicago St. as a city-designated landmark.

Tony in this instance The Witch® took the American product and stuffed it full of even more air, made it taste worse and reduced the manufacturing costs.

No different to any of her other spells really

and then stood in front of the Mr Whippy taking it away from young children :)

Fulham Manager Martin Jol`s head is so big and round that he has to have his clothes come in 2 pieces that are attached by velcro at the sides as it is physically imposible to get a jumper or t-shirt to strech over his melon sized head without it ripping
