    Hazelnut Butter Grilled Scallops w/ Salad

    Scallops.

    - 1tsp olive oil

    - 1 shallot, peeled, finely sliced

    - 75g butter, softened

    - 1/2 lemon, zest only

    - 1 tbsp finely chopped fresh chervil

    - 1 tbsp finely chopped fresh chives

    - 45g hazelnuts, finely chopped

    - salt and fresh ground pepper

    - 6 scallops, cleaned

    Salad.

    - 1/2 tbsp wholegrain mustard

    - 1/2 tbsp good quality white wine vinegar

    - 1 1/2 tbsp good quality rapeseed oil

    - 1 little gem lettuce, leaves separated

    - 1 punnet pea shoots

    Preparation.

    - For the scallops heat a frying pan until warm. Add the olive oil and shallot and fry gently until softened but not coloured

    - Place the butter into a bowl and add the cooked shallot, along with all the remaining scallop ingredients, except the scallops. Season, to taste, with salt and freshly ground pepper and mix well

    - Preheat the grill to high

    - Place the scallops onto a grill tray and top each one with a spoonful of the hazelnut butter. Place under the grill for 3-4 minutes or until just cooked through. Remove from the grill and set aside to rest for 1 minute.

    - For the salad, whisk the mustard, vinegar and oil together in a bowl. Place the lettuce leaves and pea shoots into a bowl, drizzle over the dressing and stir to coat.

    - To serve, place 3 scallops onto each of 2 serving plates and serve with a pile of salad.

    Anyways, I'm not a great cook but I can get by. I'm great at recipes I've done before but I'm crap at following a recipe that is new to me. I tend to over think it and mess it up somehow. Usually by getting times and stuff wrong. I tend to keep things simple. Chicken/Turkey, mince meet, pastas, the occasional roast etc.. Well I thought I'd really try and do something special for the missus so tomorrow night I shall be attempting...

    Starter: Hazelnut butter grilled scallops with salad

    Main Course: Grilled lamb with fondant potatoes and slow-roasted tomatoes

    Desert: Eton Mess

    Going shopping tonight to get the massive list of ingredients I need.

    I reckon once I've prepped all the stuff reading for cooking I should be good to go. Just gotta take my time.

    Our new company website is now live and we wanna get some hits, best way to do that is optimise the keywords for our site and get noticed on some searches.

  4. At the end of the day the Villa managers job is vacant. There have probably been a few people apply (MM), our board probably have a few people who haven't applied in mind (OGS), they aren't going to just get one guy in and sign him there and then.

    OGS has come in, as per the boards request, for an interview and for them to explain the situation and expectations. I reckon we could see a few more names over the next week. So I don't expect anything to be signed and sealed this weekend with OGS. He's in the running and he's had his interview. That's all.

    I think it is a bit more than that Dante. I think he is their choice. Otherwise you would not fly him over on Randy's own jet.

    The most inconspicuous way would have been OGS to fly to Manchester and meet in a secret location.

    I think that OGS is a board favourite, but by the same token I also think the board are wanting to do things right this time and as such will have a few people in for talks. I don't think they would restrict themselves to just 1 target. The fastest way to get OGS in for a talk would be to fly him in, so that's what they've done.

    Plus it looks professional :D

    I'll claim my prize now.

  7. After thinking about it and disregarding the 'unknown' aspect of his managerial ability I'm of the opinion that this could be a good appointment.

    Just what we need after Houllier and McLeish. Fresh start with a young, determined manager who has worked with SAF for the best part of 10 years.

    He'll need time, and I'll give it him.

  8. Thought I'd update with my current lifts. The weights listed are my max 1x5 sets I've done.

    Squats

    100kg - 220lbs

    Bench Press

    80kg - 176lbs

    Bent-Over Rows

    60kg - 132lbs

    Overhead Press

    50kg - 110lbs

    Deadlift

    120kg - 265lbs

    I've noticed a big difference in my physique. I'm broader and more toned in certain areas. I've got muscles I didn't even know I had in my shoulders and forearms. Legs are getting thinner and stronger, ass is tighter. It's all good.

    My aim now is to carry on with what I'm doing but amend my diet. I don't eat badly, but I could eat better, and I know doing so will yield better results.
